It's a recipe Théophile discovered 20 years ago while living in his Indian friend's shabby apartment in the prestigious Brooklyn Heights neighborhood at the foot of the Brooklyn Bridge in New York.
He had just discovered veganism, which suited him like a glove, and he had to relearn how to cook without animal products. This recipe for walnut pie was a real treat, easy and delicious. He remembers bringing two of these wonderful pies for the homeless Christmas from the Quaker home he went to on Sundays.
For the dough, simply mix flour with sugar, oil, water and a little yeast. The filling is mainly composed of coarsely mixed walnut kernels then mixed with sugar. Then add a little vanilla sugar and wheat flour. Everything is mixed with the gradual addition of soy milk until a creamy consistency is obtained. The dough is spread in a mold and the filling comes as a second layer over the entire surface. The finest walnut kernels will be placed on top and the pie can go into the oven.
Once cooled, the final touch is a glaze made with icing sugar and lemon juice.
Dough : 2 cups of flour, 2 tbsp of sugar, 1/2 sachet of baking powder, 1/3 cup of oil, water
Filling : 4 glasses of walnuts, 1.5 glasses of sugar, 1 sachet of vanilla sugar, 2 tbsp of flour, soy milk
Icing : 1/3 glass of icing sugar, 2 tbsp of lemon juice
